Apollon Restaurant

Original chef and owner, Stavros Kodis, was born and raised in Greece. He opened his first restaurant, Bij de Griek, in Aalst, Belgium. Ten years later he moved to Wisconsin and opened the Apollon restaurant after buying it from the Karras family. His passion for Mediterranean cuisine has prospered in the Fox Valley ever since. Before losing his battle with cancer in October 2013, Stavros initiated plans to sell the Apollon to Craig Persha and Modesto Santander, who were long time employees. Today, Craig and Modesto, still operate the Apollon with the same passion and enthusiasm as their former owner.

Brian McGinnis and Ryan Perkins


Brian McGinnis is Vice President of Finance at ThedaCare. Prior to his role at ThedaCare, Brian was a Senior Manager at Baker Tilly.


Ryan Perkins has been at ThedaCare as Brand Manager for Cardiovascular, Orthopedics & Spine since July 2013. Ryan’s unique blend of strategic marketing, community relations, consumer advocacy and fund development background develops new opportunities and customers by cultivating consumer loyalty and advocacy through enhanced experiences.
